Mexican   -   Beef With Green Chili   adapted from Regional Cooks of Mexico

Ingredients
  • 2 Pounds Beef -- cubed
  • 3 Cloves Garlic -- chopped
  • 1 Teaspoon Salt
  • 2 Cups Water
  • 2 Tablespoons Olive Oil
  • 1 Medium White Onions -- chopped
  • 1 1/2 Tablespoons Flour
  • 12 Anaheim Chili Peppers -- chopped
  • 2 Small Tomatoes -- chopped
Directions Simmer beef, salt, garlic and 1/2 cup water in pan for 1 hour until tender. Saute onion and the meat. Sprinkle flour into pan, and let brown slightly. Add chiles, tomatoes and water. A simmer for 20 minutes.
Serves 6
