Mexican   -   Broccoli Quesadillas   adapted from super foods cookbook

Ingredients
  • 1 Head Broccoli -- broken in florets
  • 2 Teaspoons Olive Oil
  • 1 Large Red Onion -- finely chopped
  • 3 Cloves Garlic -- finely chopped
  • 1/2 Teaspoon Ground Cumin
  • 1/2 Teaspoon Chili Powder
  • 1/8 Teaspoon Cinnamon
  • 2 Medium Jalapeno -- finely chopped
  • 6 Medium Cherry Tomatoes -- quartered
  • 1 Tablespoon Fresh Cilantro -- minced
  • 6 Medium Tortillas
  • 1/4 Cup Mozzarella Cheese -- shredded
  • 1 Cup Salsa
  • 1 Cup Yogurt
  • Avocado -- optional
Directions steam broccoli until tender. chop coarsely and set aside. saute onions, garlic, and the dry spices. add broccoli, peppers, tomatoes, and cilantro and saute for 4 minutes longer. divide mixture onto tortillas and sprinkle with cheese and fold in half. heat in frying pan until cheese melts. top with garnishes as desired.
