Mexican   -   Butifarria   adapted from Food From My Heart by Zarela Martinez

Ingredients
  • 1 Teaspoon Anise Seed
  • 2 Pounds Ground Pork
  • 1 Tablespoon Pepper
  • 2 Cloves Garlic -- finely chopped
  • 1/2 Cup Brandy
  • Salt -- to taste
  • 1/2 Teaspoon Nutmeg
  • 1/2 Teaspoon Thyme
  • 1/2 Teaspoon Oregano
  • 2 Medium Bay Leaf -- ground
  • 1 Lemon Lemon Juice
  • Sausage Casings -- optional
Directions Toast anise seed in heavy skillet for 10 minutes. Place meat and all ingredients but casings, in a large bowl. Mix well. Place into sausage casings if desired.
Serves 1
