Mexican   -   Camarones Al Ajillo   adapted from Food From My Heart by Zarela Martinez

  • 5 Cloves Garlic -- finely chopped
  • 1 Tablespoon Knorr Chicken Stock Base
  • 1 Cup Extra Virgin Olive Oil
  • 6 Medium Guajillo Chiles -- dried
  • 4 Large Poblano Peppers -- finely chopped
  • 2 Pounds Large Shrimp
  • Salt -- to taste
  • 1 Lime Lime Juice
Directions In small bowl, combine garlic, chicken base and oil. Allow to marinate over night. Chop dried chiles and marinate in the oil mixture for 3 hours. Drain oil from mixture and combine garlic and chiles with remaining ingredients except lime juice. Heat a skillet to high and briefly saute ingredients until shrimp is done. Sprinkle with lime juice and serve.
