Mexican   -   Camarones En Frio   adapted from Flavors of Mexico by Marlena Spieler

  • 2 Medium Onion -- thinly sliced
  • 1 Lime Lime Juice
  • 2 Cloves Garlic -- finely chopped
  • 2 Tablespoons Vegetable Oil
  • 1 Pound Prawns
  • 1 Pinch Black Pepper
  • 1 Pinch Cayenne
  • 1 Pinch Paprika
  • 1 Pinch Oregano
  • 3 Tablespoons White Wine Vinegar
  • Salt -- to taste
Directions Combine half the onions with lime juice and chill for 30 minutes. Saute remaining onion with garlic in oil. When softened add prawn and spices. Stir. Splash vinegar into pan and let evaporate. Allow to cool and serve.
