Mexican - Carmelized Carnitas

Ingredients

- 1/4 Cup Olive Oil
- 4 Pounds Lean Pork -- cubed
- Salt And Pepper -- to taste
- 3/4 Cup Orange Juice
- Tortillas -- corn preferred
- Salsa

Directions
|
Add oil to dutch oven and add a single layer of pork. This may require doing more than 1 batch. Brown pork until very brown on all sides about 15 minutes. After all batches are done, drain oil from pan and return all pork back to pan. Add orange, salt and pepper. Bring to a boil, reduce heat, simmer until liquid turns to a glaze about 15 minutes. Preheat oven to 300 degrees. Bake, covered until the meat is tender about 40 minutes. Serve in tortillas with salsa.
