Mexican   -   Chicken In Garlic & Cumin   adapted from Regional Cooks of Mexico

Ingredients
  • 4 Ancho Chile Peppers -- chopped
  • 1 Teaspoon Cumin
  • 2 Teaspoons Pepper
  • 1 Teaspoon Salt
  • 4 Cloves Garlic
  • 1 Clove
  • 3 Cups Water
  • 3 Tablespoons Olive Oil
  • 2 Pounds Chicken
Directions in mortar, grind cumin, pepper, salt, clove, garlic, & 1/4 cup water. Saute chicken until done. Add spice mixture and the chiles. Saute for 6 minutes. Add water, simmer for 50 minutes.
Serves 6
