Mexican   -   Chicken Quesadillas   adapted from unknown

  • 2 Teaspoons Oil
  • 1 Pound Chicken Breast -- halved
  • 1/4 Cup Fresh Cilantro -- chopped
  • 1/4 Teaspoon Cumin
  • 8 Flour Tortillas
  • 1 Cup Cheddar Cheese -- shredded
  • 1 Can Green Chiles -- drained
Directions Saute chicken, cilantro & cumin 15-20 minutes in oil. Shred chicken, and stir it in well with cilantro & cumin. Brush tortilla bottom with oil and place in skilltet. Top with 1/4 of chicken mixture, 1/4 cup cheese, and 1/4 of chiles on top, top with other tortilla brush top with oil. flip and cook more after 1st side gets done. 2 minutes per side. Serve whole or in wedges
