Mexican   -   Chili Zucchini   adapted from bean banquet

Ingredients
  • 2 Cans Kidney Beans
  • 3 Tablespoons Olive Oil
  • 2 Medium Zucchini -- chopped
  • 1 Large Onion -- chopped
  • 1 Large Green Pepper -- chopped
  • 2 Cloves Garlic -- chopped
  • 15 Ounces Canned Tomatoe Sauce
  • 2 Tablespoons Chili Powder
  • 1/4 Teaspoon Ground Cumin
  • 8 Ounces Monterey Jack Cheese -- grated
  • Salt And Pepper -- to taste
  • Fresh Cilantro -- to taste
Directions saute zucchini in olive oil and set aside. add more oil if needed then add onion, green pepper and garlic. add remaining ingredients but zucchini and cheese. in deep 3 quart casserole dish, place 1/3 zucchini, pour 1/2 bean mixture over, top with 1/3 cheese and repeat layers ending with cheese. cover and bake at 350 for 25 minutes.
