Mexican   -   Chipotle Mayonaise   adapted from Vincent's Cookbook

Ingredients
  • 2 Chipotle Pepper -- canned
  • 1 Medium Egg Yolk
  • 1 Tablespoon Sherry Vinegar
  • 1 Tablespoon Prepared Mustard
  • 1 1/2 Tablespoons Lemon Juice
  • Salt And Pepper -- to taste
  • 1 Cup Olive Oil
Directions Combine everything but oil in food processor. While processor is running, add oil very slowly. When it turns into mayonaise, it's done.
