Mexican   -   Chipotle Pasta With Grilled Shrimp   adapted from vincents cookbook

  • 1/2 Recipe Chipotle Pasta -- cooked
  • 32 Medium Shrimp -- peeled and deveined
  • 8 Bamboo Skewers -- soaked in water
  • 1 Tablespoon Olive Oil
  • Salt And Pepper -- to taste
  • 1 Tablespoon Parsley -- chopped
Directions Thread 4 shrimp per skewer about an inch apart. brush the shrimp with olive oil , salt and pepper. Grill over hot fire for 1 minute per side. toss pasta with shrimp and parsley.
