Mexican   -   Crab And Avocado Tortas   adapted from Flavors of Mexico by Marlena Spieler

Ingredients
  • 4 Hard Rolls -- split
  • Butter -- for spreading
  • 10 Ounces Crabmeat
  • 3 Tablespoons Sour Cream
  • 1/2 Teaspoon Mild Chili Pepper
  • 1 Small Onion -- sliced
  • 1 Lime Lime Juice
  • 1 Cup Lettuce -- shredded
  • 2 Small Avocado -- diced
  • 2 Small Tomatoes -- diced
  • Salt And Pepper -- to taste
  • Salsa -- to taste
Directions Pull out some of the inside of the rolls and then butter the inside. Brown rolls on both sides on a griddle. Meanwhile mix crab with sour cream until it binds together. Season with chili pepper, onion, and lime juice. When the rolls are crisped, remove from oven and stuff with crab salad, lettuce, tomato and avocado. Sprinkle with salt and pepper. Serve with salsa.
