Mexican   -   Crab And Noodle Casserole   adapted from Yucatan Cookbook

  • 2 Medium Anaheim Chili Pepper -- roasted and diced
  • Cooked Noodles -- any kind
  • 1/2 Pound Crab Meat
  • 2 Ounces Queso Anejo
  • 2 Ounces Queso Fresco
  • 1 Tablespoon Butter
  • 1/2 Cup Half And Half
  • Salt And Pepper -- to taste
Directions Put half the cooked noodles in the bottom a greased baking dish. Distribute crab over noodles. Dot with half the butter and salt lightly. Put rest of the noodles over the top, dot with butter and distribute the cheese over. Pour in half and half. Place chile dice over the top. Bake in 300 degree oven for 20 minutes.
Serves 4
