Mexican   -   Fish With Cilantro   adapted from Latin American Cooking

  • 3 Pounds Fish Fillets -- any kind
  • Salt And Pepper -- to taste
  • 1/4 Cup Lemon Juice
  • 5 Tablespoons Olive Oil
  • 1 Medium Onion -- chopped
  • 1/2 Cup Cilantro -- chopped
  • 3 Large Jalapeno Peppers -- chopped
Directions Season fish with salt, pepper and lemon juice. Using 1 tab of oil, oil bottom of oven-proof casserole. In a skillet, saute onion, peppers until soft. Arrange fish in casserole, top with peppers & onions. Sprinkle cilantro atop. Bake at 350* for 20 minutes.
Serves 6
