Mexican   -   Frijoles A La Yucateca (Black Beans Yucatan Style)   adapted from The South American Cookbook by Cora, Rose and Bob Brown

  • 3 Cups Black Beans -- Cooked
  • 1 Tablespoon Salt
  • 3 Tablespoons Olive Oil
  • 1 Medium Onion -- Chopped
  • 1 Clove Garlic -- Chopped
  • 2 Cups Pork Broth Or Chicken Broth
  • 1 Pound Ham Or Pork -- Cubed
  • 1 Small Onion -- Thinly Sliced
  • 1 Medium Jalapeno -- Chopped
  • Romano Cheese -- To Taste
Directions Saute chopped onion in oil for 5 minutes. Add garlic, salt, pork, broth, sliced onion and jalapeno. Simmer for 15 minutes. Add beans and simmer for 5 minutes. Serve over rice topped with cheese.
