Mexican   -   Frijoles Mexicana   adapted from Flavors of Mexico by Marlena Spieler

  • 8 Medium Tomatoes -- whole
  • 4 Medium Onions -- chopped
  • 3 Tablespoons Olive Oil
  • 2 Cups Refried Beans
Directions Roast tomatoes over open flame. When charred, remove from heat and cool. Chop including blackened skin. In a blender, puree onions and tomatoes. Heat oil in large skillet, add tomatoe mixture and let it fry to a concentrated dry pruee. Add beans, cook until well mixed and heated through.
