Mexican   -   Goat Cheese Salad   adapted from Vincent's Cookbook

  • 8 Cups Mixed Greens -- torn
  • 8 Ounces Goat Cheese
  • 1 Teaspoon Black Pepper
  • Basil And Sherry Vinegar Dressing
Directions Prepare greens, toss with chilled dressing and place on individual serving plates. Cut cheese into 8 equal slices, roll in pepper, and arrange on baking sheet, put under broiler for 1 minute. Place cheese on top of greens and serve immediately.
