Mexican   -   Green Chile Rice With Crab   adapted from The Universal Kitchen by Elisabeth Rozin

Ingredients
  • 6 Large Scallion -- Chopped
  • 3 Cloves Garlic -- Chopped
  • 1 Stalk Celery -- Chopped
  • 1 Large Bell Pepper -- Chopped
  • 2 Medium Serrano Pepper -- Chopped
  • 2 Tablespoons Olive Oil
  • 1 Cup Rice
  • 2 Cups Chicken Stock
  • 1 Teaspoon Epazote -- Optional
  • 1/2 Teaspoon Oregano
  • 1 Cup Crab Meat -- Chopped
  • 1 Lime Lime Juice
  • Cilantro -- Chopped
Directions Saute scallions, garlic, celery, bell pepper and chiles in oil for 10 minutes. Add rice and stir well. Add stock, epazote and oregano. Cover and bring to a simmer for 20 minutes. Add crab, llime juice and cilantro. Simmer for 5 minutes and serve.
