Mexican   -   Grilled Shrimp With Chipotle Mayonaise   adapted from Vincent's Cookbook

  • 32 Small Shrimp -- peeled & deveined
  • 1 Tablespoon Olive Oil
  • Salt And Pepper -- to taste
  • 3/4 Cup Chipotle Mayonaise
  • 1 Tablespoon Parsley -- chopped
Directions Oven Directions:
Thread shrimp on skewer.
Place them in shallow pan. Brush with olive oil, salt and pepper.
At the "broil" setting (550*) grill then 1 minute on each side.
Add chopped parsley to the mayonaise and stir.
Dip in sauce and eat.
Shrimp may also grilled over hot fire, 1 minute per side.
Serves 4
