  • 1 Tablespoon Salt
  • 2 Teaspoons Grated Lemon Peel
  • 2 Teaspoons Grated Lime Peel
  • 1 1/2 Teaspoons Onion Powder
  • 1 1/2 Teaspoons Ground Ancho Pepper
  • 1 1/2 Teaspoons Ground Chipotle Pepper
  • 1 Teaspoon Cayenne
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Black Pepper
  • 1 Teaspoon White Pepper
  • 1 Teaspoon Ground Guajillo Pepper
  • 2 Pounds Tempeh -- scalloped
  • 3 Tablespoons Olive Oil
  • 2 Medium Onions -- chopped
  • 1 Lemon Lemon Juice
  • 1 Lime Lime Juice
  • 3 Tablespoons All-Purpose Flour
  • 1 Tablespoon Fresh Garlic -- finely chopped
  • 1 Tablespoon White Vinegar
  • 2 Cups Beef Stock -- in all
  • 1/2 Cup Cilantro -- not chopped
Directions combine seasoning mix in small bowl. sprinkle scalloped meat with 3 tabelspoons of mix. rub in well. heat oil in 5 quart pan, brown steak for 7 minutes. add onions, saute for 4 minutes. add fruit juices, flour , garlic, vinegar and remaining seasoning mix. scrape the bottom of the pan and cook for 4 more minutes. add 1 cup stock, scrape the brown bits off the bottom of pan. stir occasionally, cook for 6 minutes. add remaining stock, scrape and cilantro, cover and reduce heat to low. simmer, stirring occasionally for 20 minutes. serve hot.
