Mexican   -   Jicama-Spinach Salad   adapted from Betty Crockers New International Cookbook

  • 2 Cups Spinach -- shredded
  • 1 Large Jicama -- finely chopped
  • 2 Medium Carrot -- chopped
  • 1 Small Red Bell Pepper -- chopped
  • 1 Small Red Onion -- finely chopped
  • 2 Cups Lettuce -- shredded
  • Lime Yogurt Dressing
Directions prepare lime yogurt dressing in large glass or plastic bowl. add all ingredients except lettuce. cover and chil for 2 hours and serve on lettuce.
