Mexican   -   Layered Black Bean Dip   adapted from unknown

  • 1 7/8 Pounds Black Beans -- rinsed and drained
  • 1/2 Pound Black Olives
  • 2 Small Onion -- chopped
  • 2 Cloves Garlic -- mashed
  • 1/4 Cup Olive Oil
  • 1/4 Cup Lime Juice
  • 1/2 Teaspoon Salt And Pepper
  • 1 Teaspoon Crushed Red Pepper
  • 1 Teaspoon Cumin
  • 1 Pound Cream Cheese -- softened
  • 4 Eggs -- hard cooked
  • 2 Small Red Bell Pepper
  • 4 Green Onions -- chopped
Directions Mix together all the ingredient on the list before the cream cheese. Combine in a large glass or plastic bowl and refrigerate 1 hour to let tastes blend. Spread cream cheese on a large serving plate, top evenly with bean mixture. Slice eggs and arrange around edge of plate. Sprinkle with bell pepper and green onions to add to color. Serve.
