Mexican   -   Mayan Turkey Kabobs   adapted from The Universal Kitchen by Elisabeth Rozin

Ingredients
  • 1 Medium Ancho Chile -- Chopped
  • 1 Small Onion -- Chopped
  • 3 Cloves Garlic -- Chopped
  • 1 Tablespoon Orange Juice
  • 1 Lemon Lemon Juice
  • 1 Teaspoon Achiote
  • 1/4 Teaspoon Salt
  • 1 Teaspoon Oregano
  • 1 Tablespoon Olive Oil
  • 2 Pounds Turkey -- Cubed
  • Tortillas -- Warmed
  • 2 Cups Black Beans -- Cooked
Directions In a food processor, combine ancho, onion, garlic, orange juice, lemon juice, achiote, salt and oregano. Process to a paste. Add oil to the paste and mix well. Combine paste with turkey and marinate for 8 hours. Thread turkey onto skewers. Grill or broil for 5 minutes per side or until done. Place turkey cubes in a tortilla, cover with black beans and serve.
