Mexican   -   Mexican Macaroni And Cheese   adapted from Betty Crockers New International Cookbook

  • 7 Ounces Macaroni -- cooked
  • 3 Medium Green Chiles -- chopped
  • 1 1/2 Cups Cheddar Cheese -- shredded
  • 1 Cup Sour Cream
  • 1 Small Onion -- finely chopped
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Dried Oregano
  • 1/2 Cup Tortilla Chips -- crushed
Directions preheat oven to 350 degrees. cook macaroni as directed. mix macaroni , chiles, 3/4 cup cheese, sour cream, onion, salt and oregano in ungreased 2 quart casserole. Mix tortilla chips and remaining cheese and sprinkle over mixture. bake uncovered for 25-30 minutes.
