Mexican   -   Mint Scented Chickpea Soup   adapted from Flavors of Mexico by Marlena Spieler

  • 1 Medium Onion -- chopped
  • 2 Cloves Garlic -- finely chopped
  • 2 Tablespoons Olive Oil
  • 2 Cups Cooked Chickpeas
  • 3 Cups Chicken Broth
  • 1 Teaspoon Mint
  • Salt And Pepper -- to taste
  • Lemon Wedges -- for garnish
Directions Saute onion and garlic in oil until onion is lightly browned. Add chickpeas and stir through onion mixture. Add broth and bring to a boil. Drain chickpeas, reserving broth. Place chickpeas in a blender and puree, with machine still running add broth. Season with mint, salt and pepper. Serve with a lemon wedge.
