Mexican - Mint Scented Chickpea Soup

Ingredients
|
- 1 Medium Onion -- chopped
- 2 Cloves Garlic -- finely chopped
- 2 Tablespoons Olive Oil
- 2 Cups Cooked Chickpeas
- 3 Cups Chicken Broth
- 1 Teaspoon Mint
- Salt And Pepper -- to taste
- Lemon Wedges -- for garnish

Directions
|
Saute onion and garlic in oil until onion is lightly browned. Add chickpeas and stir through onion mixture. Add broth and bring to a boil. Drain chickpeas, reserving broth. Place chickpeas in a blender and puree, with machine still running add broth. Season with mint, salt and pepper. Serve with a lemon wedge.
