Mexican   -   Mushrooms In A Chili Sauce   adapted from Regional Cooks of Mexico

  • 1 Tablespoon Olive Oil
  • 8 Ounces Mushrooms -- sliced
  • 1/2 Teaspoon Salt
  • 3 Anaheim Chili Pepper -- chopped
  • 1 Teaspoon Pepper
  • 1/2 Teaspoon Cumin
  • 1 Clove Garlic
  • 1 1/2 Tablespoons Olive Oil
Directions Saute mushrooms & salt for 10 minutes. Seed chiles, then soak in hot water for 15 minutes until the soften. In blender add chiles, garlic & additional spices. Blend until smooth. Using othe oil, saute this mixture 5 minutes until it starts to reduce. Put mushrooms on plate, top with sauce.
Serves 6
