Mexican - Pollo Con Chile Ancho

Ingredients

- 4 Large Ancho Chiles
- 1/2 Cup Olive Oil
- 1 Tablespoon Sesame Oil
- 3 Pounds Chicken -- in pieces
- Salt And Pepper -- to taste
- 1 Large Onion -- finely chopped
- 2 Cloves Garlic -- finely chopped
- 3 Medium Bay Leaf
- 10 Berries Allspice
- 2 Cups Chicken Stock
- 1 Tablespoon Sugar
- 1 Cup Red Wine Vinegar

Directions
|
Heat a griddle over high heat, add chiles and cook, turning once or twice. Remove and set aside. In large dutch oven, combine oils and heat over medium heat. Salt and pepper the chicken and brown thoroughly. Remove to platter. Add onion and garlic and cook stirring about 5 minutes. Add chiles, bay leaves, allspice, chicken stock and sugar. Add vinegar. Bring to a simmer and cook for 25 minutes.
