Mexican   -   Quesadillas De Pescado Vercruzana   adapted from Yucatan Cookbook

  • 1 Pound Fish Fillet
  • Salt And Pepper -- to taste
  • 2 Medium Onion -- sliced
  • 1 Medium Clove -- ground
  • 1 Medium Bay Leaf
  • 1 Clove Garlic -- finely chopped
  • 1 Medium Tomato -- finely chopped
  • 2 Medium Jalapeno -- finely chopped
  • 1 Teaspoon Vinegar
  • 1 Tablespoon Cilantro -- finely chopped
  • Tortillas
  • Oil For Frying
Directions Boil fish in enough salted water to cover along with 1 onion, clove, bay leaf, and garlic for 10 minutes. Remove fish and let cool. Shred.
Fry onion, tomato, jalapeno and vinegar in oil for 8 minutes. Add fish and cilantro. Put fish mixture over half of a tortilla, fold over and fry on side until it begins to brown. Serve.
