Mexican   -   Smoky Chicken And White Bean Chili   adapted from The Universal Kitchen by Elisabeth Rozin

Ingredients
  • 2 Medium Ancho Chiles -- Ground
  • 2 Medium Chipotle Pepper -- Ground
  • 1 Medium Onion -- Chopped
  • 2 Tablespoons Olive Oil
  • 2 Pounds Chicken -- Cubed
  • 3 Cloves Garlic -- Chopped
  • 1/2 Teaspoon Salt
  • 2 Cans Tomatoes -- Chopped
  • 1 Teaspoon Cumin
  • 1/2 Teaspoon Oregano
  • 2 Cans White Beans -- Cooked
  • Tortilla Chips Or Tortillas
  • Sour Cream
Directions Saute onion in oil for 5 minutes. Add chicken and brown. Add garlic and salt and stir well. Add tomatoes, both chiles, oregano and cumin. Bring to a simmer for 30 minutes. Add beans and simmer for 5 minutes. Serve with chips or tortillas and sour cream.
