Mexican   -   Sopa Caldosa De Fideos   adapted from Food From My Heart by Zarela Martinez

  • 1/4 Cup Olive Oil
  • 1/2 Pound Vermicelli -- broken
  • 1 Small Onion -- finely chopped
  • 1 Medium Tomato -- roasted and chopped
  • 2 Cloves Garlic -- finely chopped
  • 10 Cups Chicken Stock
  • Salt And Pepper -- to taste
  • 5 Sprigs Cilantro -- chopped
  • 1/4 Cup White Chedder Cheese -- diced
Directions Heat oil in dutch oven over medium heat, add noodles and brown. Lift noddle from oil and drain on paper towels. Discard oil in pan. Add onion, tomato, and garlic. Cook for 3 minutes. Add chicken stock and bring to a boil. Season with salt and pepper. Reduce heat to low and simmer 5 minutes. Add noodles and cilantro and simmer until noodles are just done about 6 minutes. Serve with cheese sprinkled over the top.
