Ingredients
  • 1/3 Cup Fresh Lime Juice
  • 2 Tablespoons Corn Oil
  • 1 Teaspoon Sugar
  • 1 Teaspoon Tabasco Sauce
  • 1 Clove Garlic -- finely chopped
  • 1 Medium Jalapeno -- finely chopped
  • Salt And Pepper -- to taste
  • 1 1/2 Cups Adzuki Beans -- cooked
  • 1/4 Cup Scallion -- chopped
  • 7 Ounces Roasted Red Peppers -- chopped
  • 2 Tablespoons Cilantro -- chopped
  • 4 Cups Brown Rice -- cooked
  • 4 Cups Mixed Lettuces -- torn
Directions In a large bowl, whisk together lime juice, oil, sugar, tabasco, garlic, jalapeno, salt and pepper. Add beans, scallions, red peppers, cilantro and rice. adjust seasonings with salt and pepper. Serve on bed with mixed lettuces.
