Mexican   -   Tarascan Tomato Soup   adapted from ethnic cuisine

Ingredients
  • 2 Tablespoons Olive Oil
  • 1 Medium Onion -- chopped
  • 3 Cloves Garlic
  • 2 Medium Green Pepper -- chopped
  • 16 Ounces Kidney Beans -- undrained
  • 1 Can Tomatoes -- chopped
  • 4 Cups Stock
  • 6 Ounces Tomato Paste
  • 2 Large Ancho Chil -- chopped
  • 1 Teaspoon Oregano
  • Pepper -- to taste
  • 1 Cup Cheddar Cheese -- grated
  • Tortilla Chips -- to garnish
Directions In large pot saute onions garlic and green peppers in olive oil. In food processor Add beans and tomatoes, process to a paste. Add puree to pot, stock, and al other ingredients except cheese and chips. Simmer 45 minutes. Before serving, put handful of grated soup bowl, ladle hot soup over, then garnish with chips. You may also wish to garnish with sour cream.
