Mexican   -   Tortilla Soup   adapted from Mollie Katzen's Vegetable Heaven

Ingredients
  • 3 Cups Corn
  • 2 Bunches Scallion -- Chopped
  • 1 Bunch Cilantro -- Chopped
  • 6 Cups Chicken Broth
  • 1 Teaspoon Salt
  • 2 Teaspoons Olive Oil
  • 1 Medium Onion -- Chopped
  • 1 Medium Poblano Peppers -- Chopped
  • 1 Medium Anaheim Chili Pepper -- Chopped
  • 3 Cloves Garlic -- Chopped
  • 1 Teaspoon Salt
  • 2 Medium Red Bell Pepper -- Roasted And Chopped
  • 1 Can Tomatoes -- Chopped
  • 1 Lime Lime Juice
  • Cayenne -- To Taste
  • Tortilla Strips -- Or Chips
Directions Bring corn, scallions, cilantro, broth and salt to a boil. Simmer for 30 minutes. Saute in oil, onions, poblano, anaheim, garlic and salt. Saute for 5 minutes. Cover and reduce heat. Simmer for 10 minutes. Place roasted peppers and tomatoes in blender. Puree. Add this to the onion mixture. Combine the soup with the onion mixture. Add lime juice, salt and cayenne. Simmer for 2 minutes. Serve topped with tortilla strips or chips.
