Mexican   -   Yucatan Pork Pieces   adapted from Regional Cooks of Mexico

Ingredients
  • 1 Tablespoon Hot Sauce
  • 2 Tablespoons Vinegar -- mild
  • 2 Pounds Pork -- cubed
  • 2 Tablespoons Olive Oil
  • 3 Medium Tomatoes -- chopped
  • 1 Medium Green Pepper -- chopped
  • 1 Medium Onion -- chopped
  • 2 Teaspoons Salt
  • 10 Cloves Garlic
  • 1 Large Habenero
  • 2 Cups Cold Water
Directions Marinate pork in vinegar and hot sauce for at least 30 minutes. Saute tomatoes, garlic, peppers & onion, 10 minutes. Add salt. Put pork in saucepan with water, then sauted mixture is added on top of that. Boil, reduce heat, simmer uncovered 1 hour.
Serves 6
