Morrocan - Chicken And Olives

Ingredients
|
- 1/4 Cup Olive Oil
- 3 Pounds Chicken Breast
- 3 Cloves Garlic -- finely chopped
- 1 Large Onion -- chopped
- 1 Teaspoon Ground Ginger
- 1/2 Teaspoon Turmeric
- 1/2 Teaspoon Paprika
- Salt And Pepper -- to taste
- 2 Cups Tomatoes -- chopped
- 1 Tablespoon Parsley -- chopped
- 1 Tablespoon Cilantro -- chopped
- 1 Lemon Lemon Juice
- 7 1/2 Ounces Cracked Green Olives

Directions

In a large frying pan, heat 1 tablespoon of oil, saute chicken until brown on both sides, set aside. In an 8 quart pan, heat the remaining oil, saute garlic, onion, ginger, turmeric, paprika, salt and pepper for 5 minutes. add chicken, tomatoes, parsley, cilantro, lemon. Simmer, cover, on low for 30 minutes or until chicken is cooked. Add olives, cook 5 minutes. Salt to taste and serve.
