Morrocan - Chicken Stuffed With Cous Cous

Ingredients

- 1 Large Chicken -- Whole
- 2 Medium Red Onion -- Chopped
- 3 Tablespoons Olive Oil
- 2 Cloves Garlic -- Finely Chopped
- 2 Teaspoons Cinnamon
- 1/2 Teaspoon Saffron
- 1/2 Teaspoon Ground Ginger
- Salt And Pepper -- To Taste
- 2 Cups Chicken Broth
- 2 Tablespoons Honey
- Stuffing Recipe
- 2 Cups Water
- 2 Cups Couscous
- 1/2 Cup Almonds -- Toasted And Slivered
- 1 Tablespoon Orange Water
- 2 Tablespoons Olive Oil
- 1 Teaspoon Cinnamon
- 1 Pinch Ground Cloves
- 1 Pinch Ground Nutmeg
- Salt And Pepper -- To Taste

Directions
|
Stir water into couscous and leave 5 minutes; stir in remaining stuffing ingrediants; stuff couscous into chicken; tress up chicken with string; saute onions in oil; stir in garlic, spices and salt; add chicken to pan; pour in broth, bring to boil, and simmer for 30 minutes; add honey, and cook for 45 minutes; serve.
