Ingredients
  • 1 Large Chicken -- Whole
  • 2 Medium Red Onion -- Chopped
  • 3 Tablespoons Olive Oil
  • 2 Cloves Garlic -- Finely Chopped
  • 2 Teaspoons Cinnamon
  • 1/2 Teaspoon Saffron
  • 1/2 Teaspoon Ground Ginger
  • Salt And Pepper -- To Taste
  • 2 Cups Chicken Broth
  • 2 Tablespoons Honey
  • Stuffing Recipe
  • 2 Cups Water
  • 2 Cups Couscous
  • 1/2 Cup Almonds -- Toasted And Slivered
  • 1 Tablespoon Orange Water
  • 2 Tablespoons Olive Oil
  • 1 Teaspoon Cinnamon
  • 1 Pinch Ground Cloves
  • 1 Pinch Ground Nutmeg
  • Salt And Pepper -- To Taste
Directions Stir water into couscous and leave 5 minutes; stir in remaining stuffing ingrediants; stuff couscous into chicken; tress up chicken with string; saute onions in oil; stir in garlic, spices and salt; add chicken to pan; pour in broth, bring to boil, and simmer for 30 minutes; add honey, and cook for 45 minutes; serve.
