Morrocan   -   Chicken Tagine   adapted from Recipes for an Arabian Night by David Scott

Ingredients
  • 3 Pounds Chicken -- in large pieces
  • 2 Cloves Garlic -- finely chopped
  • 1/2 Teaspoon Turmeric
  • 1/4 Teaspoon Ginger
  • 2 Tablespoons Olive Oil
  • Salt And Pepper -- to taste
  • 4 Tablespoons Butter
  • 2 Medium Onions -- thinly sliced
  • 1 Cup Chickpeas
  • 1/2 Teaspoon Paprika
  • 1/2 Cup Olives
  • 2 Tablespoons Parsley -- finely chopped
  • 1 Lemon Lemon Juice
Directions Combine garlic, turmeric, ginger and oil. Rub into the chicken. Season with salt and pepper. Marinate for 1 hour. Put chicken, butter and half the onions in a large pan and bring to a boil. Add chickpeas and paprika. Cover and simmer for 30 minutes. Add remaining onions, olives and lemon juice. Reduce the sauce to a thick consistency and serve.
