Morrocan   -   Chicken With Lemon And Olives   adapted from From the Lands of Figs and Olives by Salloum and Peters

  • 1/4 Cup Olive Oil
  • 4 Pounds Chicken -- cubed
  • 2 Medium Onion -- finely chopped
  • 4 Cloves Garlic -- finely chopped
  • Salt And Pepper -- to taste
  • 1 Teaspoon Paprika
  • 1 Teaspoon Ground Ginger
  • 1/2 Teaspoon Turmeric
  • 1 Lemon Lemon Juice
  • 1 1/2 Cups Broth
  • 1/2 Cup Green Olive
  • 1 Medium Lemon -- sliced
Directions In a saucepan, saute the chicken pieces in oil until goldnen brown. Remove chicken and set aside. In the same pan, stir fry the onions and garlic until they begin to brown. Add the chicken and remaining ingredients, except lemon and olives. Bring to a boil, cover and simmer for 45 minutes. Add olives and simmer for 5 minutes. Serve with rice and garnished with lemon slices.
