Morrocan - Christmas Couscous

Ingredients

- 4 Tablespoons Butter
- 1 Large Onion -- Sliced
- 2 Large Carrot -- Chopped
- 1 Small Butternut Squash -- Chopped
- 1 Teaspoon Ginger
- 1/2 Teaspoon Cinnamon
- 1/2 Teaspoon Turmeric
- 1/2 Teaspoon White Pepper
- 4 Cups Chicken Stock
- 1 Medium Zucchini -- Sliced
- 1 Pound Fava Beans -- Cooked
- Salt And Pepper -- To Taste
- 1 Lemon Lemon Juice
- Cilantro -- Chopped
- 1 Pound Couscous -- Cooked
- 1 Tablespoon Olive Oil

Directions
|
Saute onions in butter for 5 minutes. Add carrots, squash and spices. Cook for 10 minutes. Add stock and simmer for 15 minutes. Add zucchini and beans. Simmer for 5 minutes. Add salt, pepper and lemon juice. Cook couscous as directed. Stir in olive oil. Ladle stew over couscous, sprinkle with cilantro and serve.
