Morrocan   -   Christmas Couscous   adapted from Vegetarian Christmas by Rose Elliot

Ingredients
  • 4 Tablespoons Butter
  • 1 Large Onion -- Sliced
  • 2 Large Carrot -- Chopped
  • 1 Small Butternut Squash -- Chopped
  • 1 Teaspoon Ginger
  • 1/2 Teaspoon Cinnamon
  • 1/2 Teaspoon Turmeric
  • 1/2 Teaspoon White Pepper
  • 4 Cups Chicken Stock
  • 1 Medium Zucchini -- Sliced
  • 1 Pound Fava Beans -- Cooked
  • Salt And Pepper -- To Taste
  • 1 Lemon Lemon Juice
  • Cilantro -- Chopped
  • 1 Pound Couscous -- Cooked
  • 1 Tablespoon Olive Oil
Directions Saute onions in butter for 5 minutes. Add carrots, squash and spices. Cook for 10 minutes. Add stock and simmer for 15 minutes. Add zucchini and beans. Simmer for 5 minutes. Add salt, pepper and lemon juice. Cook couscous as directed. Stir in olive oil. Ladle stew over couscous, sprinkle with cilantro and serve.
