Ingredients
  • 2 Pounds Chicken -- In 8 Pieces
  • 1 Teaspoon Ginger
  • 1 Teaspoon Pepper
  • 1/4 Teaspoon Saffron
  • 1 Clove Garlic -- Chopped
  • 1 Medium Onion -- Grated
  • 1 Cup Cilantro -- Chopped
  • 3 Tablespoons Olive Oil
  • 1/2 Teaspoon Cumin
  • 1/2 Teaspoon Paprika
  • Salt -- To Taste
  • 4 Cups Green Olive
  • 3 Lemon Lemon Juice
  • 4 Cups Chicken Broth
Directions Place all ingredients except olives and lemon juice into a pan. Cover and simmer for 20 minutes. Add olives and lemon juice, simmer for 10 minutes. Serve over rice.
