Morrocan   -   Kefta On Skewers   adapted from Couscous and Other Good Food from Morocco by Paula Wolfert

  • 2 Pounds Ground Beef
  • 1 Small Onion -- Grated
  • 1/3 Cup Parsley -- Chopped
  • 1/2 Teaspoon Mint
  • 1/4 Teaspoon Marjoram
  • Salt And Pepper -- To Taste
  • 1/2 Teaspoon Cumin
Directions Combine all ingredients and mix well. Refrigerate for 1 hour. Shape into 24 sausage lengths. Run a skewer through them and grill for 3 minutes per side. Serve.
