Morrocan   -   Lamb And Cayenne Kefta (Morocco)   adapted from The Whole Chile Cookbook

  • 2 Teaspoons Cayenne
  • 1 Pound Ground Lamb
  • 1 Medium Onion -- finely chopped
  • 2 Tablespoons Fresh Mint -- chopped
  • 1 Teaspoon Ground Cloves
  • 1 Teaspoon Ground Allspice
  • 1 Teaspoon Ground Ginger
  • 1 Teaspoon Ground Cardamom
  • 1/2 Teaspoon Nutmeg
  • 1/2 Teaspoon Cinnamon
  • 1/2 Teaspoon Cumin
  • Black Pepper -- to taste
Directions combine all ingredients and let sit for 1 hour to blend flavors. shape into 1 inch meatball. thread onto skewers. Either flatten slightly to make sausage shapes or leave as balls. grill over charcoal or broiler until desired doneness.
