Morrocan - Lamb And Vegetable Tajine

Ingredients

- 1/4 Cup Olive Oil
- 3 Pounds Lamb Or Beef -- cubed
- 2 Medium Onion -- sliced
- 5 Sprigs Parsley -- finely chopped
- 5 Cloves Garlic -- finely chopped
- 1 Teaspoon Salt
- 1/2 Teaspoon Paprika
- 1/2 Teaspoon Pepper
- 1/4 Teaspoon Saffron
- 1/2 Teaspoon Ground Ginger
- 1 Cup Water
- 2 Pounds Carrots -- sliced
- 1 Pound White Turnips -- chopped
- 5 Medium Potato -- peeled and sliced
- 1 Medium Green Pepper -- chopped

Directions
|
Put oil in pan, add meat, onion, parsley, garlic, salt, paprika, pepper, saffron and ginger. Saute for 5 minutes. Add water, bring to a boil, cover and cook for 30 minutes. Add vegetables, cook for another 30 minutes. You should have a small amount of sauce left if not add 1/2 cup of water. Serve with couscous or rice.
