Morrocan   -   Lamb And Vegetable Tajine   adapted from The Great Book of Couscous by Copeland Marks

Ingredients
  • 1/4 Cup Olive Oil
  • 3 Pounds Lamb Or Beef -- cubed
  • 2 Medium Onion -- sliced
  • 5 Sprigs Parsley -- finely chopped
  • 5 Cloves Garlic -- finely chopped
  • 1 Teaspoon Salt
  • 1/2 Teaspoon Paprika
  • 1/2 Teaspoon Pepper
  • 1/4 Teaspoon Saffron
  • 1/2 Teaspoon Ground Ginger
  • 1 Cup Water
  • 2 Pounds Carrots -- sliced
  • 1 Pound White Turnips -- chopped
  • 5 Medium Potato -- peeled and sliced
  • 1 Medium Green Pepper -- chopped
Directions Put oil in pan, add meat, onion, parsley, garlic, salt, paprika, pepper, saffron and ginger. Saute for 5 minutes. Add water, bring to a boil, cover and cook for 30 minutes. Add vegetables, cook for another 30 minutes. You should have a small amount of sauce left if not add 1/2 cup of water. Serve with couscous or rice.
