Morrocan   -   Macaroni With Simple Sauce (Macaronia)   adapted from The Great Book of Couscous by Copeland Marks

  • 1 Pound Macaroni
  • 1 Teaspoon Salt
  • 1 Tablespoon Olive Oil
  • 2 Tablespoons Butter
  • 1 Small Onion -- finely chopped
  • 1/4 Teaspoon Turmeric
  • 1 Clove Garlic -- finely chopped
  • 1/2 Teaspoon Black Pepper
  • 1/4 Teaspoon Ground Ginger
  • 1 Cup Water
  • 4 Tablespoons Tomato Paste
Directions Prepare macaroni according to package directions. Put oil, salt, onion, and turmeric in a saucepan. Simmer, covered for 10 minutes. Add garlic, pepper, ginger and water. Cook for 10 minutes. Add tomato paste and simmer for 10 more minutes. Add pasta, combine well and serve.
