Ingredients
  • 2 Pounds Chicken -- diced
  • 2 Large Onions -- chopped
  • 15 Ounces Chickpeas -- drained
  • 2 Large Turnips -- chopped
  • 2 Large Carrots -- chopped
  • 2 Tablespoons Olive Oil
  • Salt And Pepper -- to taste
  • 1/4 Teaspoon Ginger
  • 1/4 Teaspoon Saffron
  • 1 Pound Couscous
  • 3 Medium Zucchini -- chopped
  • 1/4 Pound Fava Beans -- fresh or frozen
  • 2 Large Tomatoes -- chopped
  • 5 Tablespoons Parsley -- chopped
  • 1 Teaspoon Paprika
  • 2 Tablespoons Butter
  • Cayenne -- to taste
  • 2 Cups Chicken Broth
Directions In dutch oven place chicken, onions, chickpeas, turnips, and carrots. Add salt, pepper ginger and saffron. saute until chicken is tender and onion is done. Add remaining ingredients. Boil, reduce heat cover and simmer 30 mintues.
Cook couscous as directed.
Stir together.
Serves 6
