Morrocan   -   Moroccan Cucumber Salad   adapted from Couscous and Other Good Food from Morocco by Paula Wolfert

  • 2 Medium Cucumber -- Peeled And Grated
  • 1 Tablespoon Sugar
  • 1 Teaspoon Vinegar
  • 1 Tablespoon Olive Oil
  • 1/4 Teaspoon Salt
  • 1/2 Teaspoon Zaatar
  • 8 Ounces Black Olives -- Optional
Directions Squeeze the cucumber dry, then combine with sugar, vinegar, oil and salt. Sprinkle with zaatar and olives. Serve.
