Morrocan   -   Seffa Merdurma (Fine Grain Couscous With Chicken)   adapted from Couscous and Other Good Food from Morocco by Paula Wolfert

  • 2 Pounds Couscous -- Cooked
  • 2 Pounds Chicken -- Cubed
  • Salt And Pepper -- To Taste
  • 1/2 Teaspoon Ginger
  • 1 Pinch Saffron
  • 1/2 Teaspoon Turmeric
  • 1 Large Onion -- Grated
  • 1/2 Teaspoon Cinnamon
  • 3 Tablespoons Butter
  • 3 Cups Chicken Stock
  • Confectioner's Sugar
  • Cinnamon
Directions Saute in butter , chicken, salt, pepper, ginger, saffron, turmeric, onion and cinnamon until the chicken is well browned. Add broth and simmer for 30 minutes. Serve over couscous, sprinkle with sugar and cinnamon.
