Ingredients
  • 1 Can Chickpeas
  • 4 Cups Couscous -- Cooked
  • 1 Pound Lamb -- Cubed
  • 2 Teaspoons Salt
  • 2 Teaspoons Pepper
  • 1 Teaspoon Ginger
  • 1/4 Teaspoon Turmeric
  • 1 Pinch Saffron
  • 1 Pinch Cayenne
  • 3 Medium Onion -- Sliced
  • 2 Sprigs Parsley -- Chopped
  • 2 Sprigs Cilantro -- Chopped
  • 3 Tablespoons Butter
  • 1 Quart Chicken Broth
Directions Place lamb, salt, pepper, ginger, saffron, turmeric, cayenne, onions, parsley, cilantro and butter in a sauce pan. Saute for 5 minutes. Add broth and simmer for 1 hour. Add chickpeas and heat through, Serve over couscous.
Serves 4
