Morrocan   -   Spiced Potatoes (Batata Mchermla)   adapted from The Great Book of Couscous by Copeland Marks

Ingredients
  • 1 Pound Potato -- cubed
  • 2 Tablespoons Olive Oil
  • 1 Large Onion -- finely chopped
  • 1 Tablespoon Tomato Paste
  • 2 Cups Water
  • 1/2 Teaspoon Salt
  • 1/4 Teaspoon White Pepper
  • 1/4 Teaspoon Sweet Paprika
  • 1/4 Teaspoon Cayenne
  • 6 Sprigs Cilantro -- finely chopped
  • 1 Medium Bay Leaf
  • 1/2 Teaspoon Olive Oil
  • 1/2 Teaspoon Ground Cumin
Directions Cover potatoes in lightly salted cold water for 15 minutes. Drain. Heat oil in pan, add onion and saute for 5 minutes. Add potato, tomato paste and water. Bring to a boil. Add salt, pepper, paprika, and cayenne. Stir well. Cover, simmer 20 minutes. Add cilantro, bay leaf, olive oil and cumin. Stir well and simmer for 10 more minutes. Serve.
