Morrocan   -   Vegetarian Chickpea Stew (Tajine De Pois Chiche)   adapted from The Great Book of Couscous by Copeland Marks

  • 1 Pound Chickpeas -- soaked overnight
  • 12 Sprigs Cilantro -- finely chopped
  • 6 Cloves Garlic -- finely chopped
  • 1 Large Jalapeno -- finely chopped
  • 1 Medium Red Bell Pepper -- finely chopped
  • 1 Tablespoon Paprika
  • 1/2 Teaspoon Salt
  • 2 Tablespoons Olive Oil
  • 3 Cups Water
Directions Put chickpeas and remaining ingredients in a pan and bring to a boil. Reduce heat to low and simmer for 30 minutes. Check chickpeas for doneness, it may be necessary to simmer for another 15 minutes. Serve with rice, couscous or bread.
Serves 6
